Since it debuted in 1954 in and along with the Hilltop Hotel in Kanda Surugadai, Tokyo, Tempura Yamanoue has shared its history with the hotel and offered the same outstanding hospitality provided to overnight guests. It is also known as the first tempura restaurant opened by a hotel in Tokyo.
The restaurant is helmed by chef Masanori Teraoka, who has devoted himself to tempura cuisine since he started his culinary career. Since then, he has lived up to the standards of Edomae tempura cuisine set for the historic restaurant that has been patronized by three generations, with the chef’s finesse bringing out the true flavor of each ingredient.
Such is the restaurant’s attention to detail that Tempura Yamanoue has used iceboxes to keep ingredients at the appropriate humidity levels since it first opened its doors, crucial to the final dish. In addition, it blends two types of 100% sesame oil, cold-pressed Taihaku and toasted Genuine sesame oil, to deep fry tempura. This oil is replaced while the flavor is at its peak and is never added incrementally. Moreover, it is used at two different temperatures to prepare tempura wrapped in their signature silky light batter.
Each ingredient is carefully selected by chef Teraoka, who visits producers around Japan to form relationships. “Collaboration with producers is the true value and advantage of a specialty restaurant,” he says.
Each tempura is complete by itself, and each ingredient is the protagonist of the dish. “Tempura is basically so simple that it cannot be standardized easily, but it is rewarding,” says Teraoka. “What matters most is devotion. We are chefs as well as hotel staff. Our service starts the moment customers step into the hotel.” He emphasizes that Tempura Yamanoue is the only restaurant that provides such an unrivaled range of services.
The interior is decorated with the paintings by literary greats who patronized the Hilltop Hotel. “We would like our guests to discover the history of this classic hotel and explore the world of literature,” he says. Tempura Yamanoue creates unforgettable memories through proven food and hospitality whenever and with whomever guests desire.
