Hitsumabushi Nagoya Bincho Lachic Location first opened its doors in 2005 on the seventh floor of the upscale Lachic center annexed to Nagoya Sakae Mitsukoshi, and conveniently located near Sakae Subway Station. It is a popular restaurant frequented by shoppers and restaurant goers at lunch and dinner time.
As indicated by its name, this location of the popular Hitsumabushi Nagoya Bincho family is devoted to Hitsumabushi, Nagoya’s specialty cuisine that highlights local grilled unagi (freshwater eels). It is made with carefully selected unagi, grilled to perfection over the indirect high heat of Bincho charcoal. Following the traditional Nagoya cooking style, the unagi is cooked until it is crisp and flavorful on the outside and tender on the inside. The unagi is then dipped in a sauce prepared by blending tamari soy sauce and mirin from Aichi and served with freshly cooked rice. According to the chef, the unagi is cooked differently each day to bring out the best flavor of the morning’s catch, requiring mastery in Bincho charcoal grilling and unagi cuisine.
Hitsumabushi goes very well with sake, so the restaurant offers a wide variety of the beverage to meet the demands of different customers, including Kamoshibito Kuheiji Junmai Daiginjo Human, Gikyo, and Chochin from Aichi; Hyakujuro Kurozura from Gifu; Sawaya Matsumoto from Kyoto, all served by the glass, square cup, or bottle.
The dining room, seating up to 50 guests, boasts large windows that offer plenty of natural light and a sense of space.
