In a quiet residential area in Higashiyama, Kyoto, surrounded by the iconic Kiyomizudera Temple, Kyoto National Museum, and Sanjusangendo Temple, Higashiyama Yoshihisa was opened by chef Yoshihisa Suzuki in 2018. Since opening, the restaurant has gained popularity, quickly being awarded one star in the world’s leading restaurant guide which it has retained since 2019.

Higashiyama Yoshihisa has received acclaim for its inventive and exquisite multi-course menus, which change monthly. The restaurant offers creative prix-fixe menus that combine a breathtaking array of cooking techniques and ingredients based on the themes inspired by nature and local terroir, such as “Nagasaki Prefecture,” “sushi x freshness,” “Niigata Prefecture x Shiga Prefecture,” “bamboo shoots x Chinese cuisine,” “Asiatic black bears x wild boars from Tamba Sasayama,” and “meat x mushrooms.” In addition, chef Suzuki, keen to entertain his guests, fills the restaurant with laughter and builds a special bond among guests with engaging conversation while showing his skillful cooking techniques in front of diners at the counter. Each tasting menu uses various ingredients carefully selected by the chef himself or discerning buyers, depending on the theme of the month. In contrast, the chef’s specialties, an assortment of smoked cheeses paired to an original highball, remain the same every month.

The drink menu also changes, depending on the theme of the month, sometimes offering Japanese sake and at other times wines and Shaoxing wines. The chef also suggests food and drink pairings to allow diners to enjoy a marriage of creative dishes matched to rare libations, some of which are so precious that they will impress even the most demanding connoisseurs.

A sophisticated interior blends Japanese and Western influences and allows the cuisine to shine. In addition, foot heaters are installed to protect diners from the cold weather of winter in Kyoto. Both the eight-seat counter in the main dining area and the six-seat table in the private room are set with carefully selected dishware, including Edo-kiriko cut glasses and vintage Baccarat glasses.
