Anyone who loves Japanese cuisine knows Seiji Yamamoto. The chef Mr. Yamamoto is ranked in the Top 10 in the World's Top 100 chefs. His world gourmet guide award Japanese restaurant, ""Nihonryori RyuGin"" represents the very essence of Japanese cuisine. It has been awarded first place in Gault et Millau Tokyo, as well as being selected as one of ""Asia's Best Restaurants"" and also one of the ""World's Best Restaurants"".

Yamamoto explains his conviction. ""I prepare Japanese dishes that showcase the splendor of Japanese ingredients to my guests, sharing with them the notion of ""Wa"" [the Japanese concept of harmony] and expressing the rich abundance of Japanese produce to create an environment where people can come together with a mutual love of food to enjoy delicious cuisine"". He opened ""Nihonryori RyuGin"" in 2003 in a back street in Roppongi. 15 years later, he moved and opened ""RyuGin Honten"" on the 7th floor of ""Tokyo Midtown Hibiya"" on August 21, 2018.

""Nihonryori RyuGin"" exclusively serves an ""omakase"" set menu (Blessings of the Season), featuring dishes specially selected by the chef. Traditional recipes are carefully followed to ensure each dish is served at the correct temperature, preserving its aromas and umami. The unique cooking here magnificently epitomizes the wealth that nature has to offer in Japan. ""There is no greater delight than tasting Japan's most treasured culinary ingredients in their most natural state"".

The dining at ""Tokyo Midtown Hibiya"" is designed to convey an intense feeling of Japanese tradition and culture. Whether at a table, in a semi-private room or private room (maximum 8 persons), you are invited to savor hospitality infused with ""Wa,"" through cooking that is ""instilled with the charms and attractions of Japan,"" resonating with your five senses to bring you a delicious taste experience.     六本木時代は良くお邪魔していましたが、日比谷に移ってからは2度目の訪問。 あの立地にあれだけの和空間を創り上げたことが凄すぎです。ハード面、ソフト面、器やお猪口、タンブラーに至るまでの全ての設えが最高レベル。 山本シェフの料理は昔から大好きで、以前より挑戦的・挑発的な料理が減った気はしますが、安定感とクオリティは正に三ツ星です。 大切な人との至福の時間を過ごさせていただきました。ありがとうございました。
