"O-Ryori Chatsubo," characterized by a Kyoto-style elegance, stands halfway up Shiokumi-zaka, right where the bustle of the metropolis starts to fade away.
The hostess, dressed in a kimono, welcomes you in as you pass under the "noren" (shop curtain) and open the door. A long counter made from a single piece of wood stretches along the restaurant, which allows customers to enjoy and savor the process by which each of the dishes is completed in the hands of the hostess, creating a sensation similar to that of enjoying a fine play on stage. In a display of the "Chatsubo" hospitality, meals start being served all at the same time. Dishes are prepared using seasonal ingredients to emphasize the time of the year, and the utmost care is placed in every detail, from the arrangement and serving of the meal to the entertainment of guests, so that the whole experience results in a relaxed and enjoyable dinner.
