Enjoy “Highroad” Edomae-style sushi at the counter of one star sushi restaurant in Osaka・Kitashinchi.

"Kitashinchi" which is said to be a fancy restaurant district alongside Ginza in Tokyo, in Kita, which is Osaka’s leading downtown area around Osaka・Umeda station.
On the 3rd floor of a street building crowded with various shops, 7 minutes walk from the station, there is the Edo Sushi restaurant "Sushi Hoshiyama" quietly located with the orthodox store arrangement.
It is loved by repeat customers because they can enjoy "Highroad hand-formed sushi" which is quite few in Kansai area and has won one star.

The owner-chef Mr. Tadashi Hoshiyama had been training for 7 years at "Tsukiji sushi Kiyoshi Kyoto" and 5 years at “Sushi Matsumoto” which has won one star, the only one in Kyoto. He started the restaurant in his hometown, saying “Kitashinchi is the best in Osaka.”, and he won one star the following year.

The owner-chef of "Sushi Matsumoto" comes from a famous restaurant "Shinbashi Shimizu" in Tokyo Shimbashi, Mr. Hoshiyama is his follower, so he provides the genuine Edomae-style sushi with the impressive effect of red vinegar in Osaka. The specialty is “Nigiri” which put together tasty Sushi rice with red vinegar made with only sake less and salt and Sushi topping that is paid a lot of attention from purchasing and cooked very carefully. It's an orthodox style with no creation, but that's why you can enjoy "Highroad Edomae sushi".

Sushi rice with special vinegar match tuna and Kohada, although white fish with marinated kelp that is condensed of good flavor, and a natural prawn that puts out good flavor and sweetness by boiling are also good to feel sushi chef’s craftsmanship of use of red vinegar.

The inside of the restaurant is only 8 counter seats with plain wood that was well-prepared.You can also enjoy 7-8 kinds of sake by seasons with baccarat antique glasses. A calm space where the eyes of the owner-chef warm-up is a "hideout" loved by sushi chef of the same profession. It is good to go with someone special, or even alone. It is a famous restaurant where you can enjoy the best moment.

    寿司ネタとシャリのバランスが最高、日本酒のお任せコースは鮨との相性バッチリ。店の大将も人当りが良く、笑顔が爽やかで雰囲気が良いと思います。外国語にも対応しており、海外からのお客さんも安心でしょう。価格も総合的に判断して妥当だと思います。また行きたい店ですね。
