“Sushi Murase” is located in Roppongi, where there are many popular restaurants. Beyond the restaurant curtain is a dignified space, and from the large window that can be seen from the counter, you can view the courtyard with its changing appearance every season.

Chef Nobuyuki Murase went independent after training at a famous sushi restaurant in Tokyo. In 2014, he opened “Sushi Murase”, named after himself. The kanji for “鮓”, stands for "To make sushi with ingredients that go well with vinegared rice, and to make vinegared rice that goes well with the sushi ingredients", which is chef Murase’s strong wish to achieve for all of his sushi.

The chef's Omakase Course includes side dishes, nigiri and sushi rolls. "The composition changes from day to day depending on the state of the sushi ingredients," chef Murase said. The seafood for sushi is purchased directly from a reliable vendor. Only salt and vinegar are used for vinegared rice, and red vinegar and rice vinegar are used separately. The restaurant specializes in matured sushi, especially matured Kohada. It is also popular among women because of its beautiful appearance. The recommended alcoholic drink to pair your sushi with is Japanese sake. There are around 35 types from around Tokyo, Tohoku and Mie Prefecture. You can choose the type that goes best with your sushi from dry, medium and sweet tastes.

The restaurant has a U-shaped cypress counter (14 -15 seats) and private rooms (up to 8 people, children are allowed). You can enjoy it in various situations such as with friends who like sushi, dates, entertaining guests from overseas, and with family for special occasions.
