Sugaya" was established in 2018 in the Higashi-Azabu area near Akabanebashi Station, close to Tokyo Tower. Chef Takayuki Sugaya, honed his skills for a total of 22 years in "Kazama Sushi Place," "Sushi Shin" in Nishi-Azabu, "Sushi Arai," and "Sushi Shō," which is a group of affiliated restaurants. After gaining experience in several famous restaurants, he achieved independence in Azabu, an area familiar to him from his skill honing days.
The Omakase course consists of 4–5 side dishes and approximately 15 pieces of sushi. "When guests come to my sushi restaurant, I want them to enjoy nigirizushi." With this philosophy, Chef Sugaya focuses only on simple side dishes. Thanks to this simplicity, diners can appreciate the high level skills underpinning the flavors of the seafood with each fish and shellfish sampled, such as the aging and curing of each individual fish and the heating of steamed dishes. The ingredients include tuna from tuna merchant "Yamayuki" and all other seafoods from Toyosu Market. The sushi rice is prepared with a blend of four varieties of "Yokoi's Vinegar" rice vinegars and red vinegars, giving depth while achieving a delicate balance that does not interfere with the flavors of the seafood. The hand shaping that has each grain of rice in its place before it melts in the mouth is also superb. With a wide range of alcoholic beverages, including 10 varieties of sake, 20 varieties of champagne, and 40 varieties of wine, dishes can be enjoyed with the alcohol of your choice.
The restaurant, fitted with a counter of Kiso hinoki cypress with a fresh look, is a luxurious space where Chef Sugaya attentively welcomes only eight guests. The chairs, custom made to allow guests to relax in comfort, are the work of artisan furniture makers from Hida. The mild manners of he and the proprietress's warm service melt away stress completely, allowing guests the leisure to savor the delights of the palate to their hearts' content without even noticing the time. Even after establishing his own restaurant, Chef Sugaya continues to sincerely pursue further sushi knowledge. Tasting his ever evolving sushi, shaped by hand, you are sure to experience the essence of the professional sushi chef.
