"Edo Fukagawa Sushi Nishichi" is located in the Monzen-Nakacho area, a place filled with the warm charm of the traditional downtown area. In addition to paying careful attention to the ingredients and seasonings we use, we also believe in taking that one extra step in the creating the flavor profile of sushi and small plates, a way of thinking which has earned us acclaim.
The Chef is Nao Inagaki. Mr. Inagaki spent 19 years working at sushi restaurants in Monzen-Nakacho, Roppongi, and Ginza. Following this, he worked as the head chef at a sushi restaurant in Minami Azabu, before opening "Edo Fukagawa Sushi Nishichi" in April of 2017. He carries on the traditions and techniques of Edo-style sushi, while also integrating new methods of cooking to create a form of Edo-style sushi for new generations to come.
Mr. Inagaki visits the Tsukiji Fish Market personally each morning, and he uses both fine seasonal fish, and also specialties which have arrived from his home prefecture of Hokkaido. For tuna he believes in selecting natural tuna caught in coastal waters, from which he serves Chutoro, marinated Zuke, and flame-seared Aburi sushi from meat on the head of the fish. His dishes made from sea bream feature that one extra step which is the hallmark of Edo-style sushi, with the addition of minced shiba shrimp, or curing and sweet shrimp with konbu.
For the sushi rice, he uses a special blend created from two varieties of red rice vinegar, and one of white vinegar. The main course is a set omakase course featuring 27 items, moving back and forth between sushi and seasonal foods. For drinks, we recommend French wine to complement the taste of the sushi, and we have five varieties each of white and red wine on offer.
The restaurant itself was created to be a place to relax and be refreshed, and the first flour features an eight-person counter made of Kiso Cypress wood, and sparing black latticework that lens a refined air. The second floor has 2 separate private rooms, one for 4 persons and the other for 8. The rooms can also be combined into one room for up to twelve people. With exposed beams on the second floor, this is a modern Japanese building in the style of a traditional Japanese home. Here you can enjoy your meal in a calm space away from the everyday.
