Orthodox tradition tempura from a 100-year-old build in Nakameguro

The location is a 3-minute walk from Tokyo's Naka-Meguro Station through the Meguro-Ginza shopping district. Entering a narrow alley just beyond the post office in front of Naka-Meguro Station, a 100-year-old tenement, surrounded by sheet metal, comes into view. Inside the entrance is "Tempura Miyashiro," which opened in 2018. The owner-chef, Mr. Naoaki Miyashiro is a talented chef who previously worked at Japanese restaurants in locations such as the Yokohama Royal Park Hotel and the Hilton Tokyo Odaiba.

True to Mr. Miyashiro's philosophy of showing "thanks for the ingredients given to us by the four seasons, the producers who bring them to us and our guests who come to enjoy them," the ingredients used and his attitude toward preparing them are full of earnestness. Mr. Miyashiro draws on technique cultivated over long years to deep fry his tempura with impeccable timing in order to maximize the flavor of his ingredients. To say nothing of its visual beauty, the tempura, enveloped in a perfect battering, features the perfect temperature and exquisite locked-in flavor and texture from the first bite. The moment the compressed flavor of the season spreads throughout the mouth is an opportunity for each guest to experience the true depth of tempura.
Also not to be missed are the seasonal small bowl and sashimi dishes served between the tempura courses. In particular, the painstakingly-prepared bonito broth is a must-try. The broth is made using only carefully-selected core material from the first-rate bonito from Makurazaki, Kagoshima Prefecture. Combining this with a soup carefully prepared using the bones of the fish used for that day's dishes allows guests to enjoy an unparalleled harmony between ingredients and broth. Mr. Miyashiro himself pairs Japanese sake and wine to fit with each monthly course.

In contrast with the tasteful retro appearance, the interior of the shop features a refined design with soft, high-quality wood trim used together with Japanese paper to create a refined, pure Japanese-styled space with a relaxed atmosphere. Only 8 counter seats are available, and since they are located relatively close to Mr. Miyashiro, guests can enjoy not only the light sizzling sounds of the frying tempura but also the proximity to the excitement of Mr. Miyashiro's culinary action. In addition to simply enjoying the food, the shop has a kindness about it that invites the care of its customers. Suitable for meals with friends, dining events and dates, it would also no doubt be an effective place to provide guests with a pleasant culinary surprise.
