Many tourists from all over the country visit Nakasu, Kyushu area's largest shopping district. At dusk, food stalls are set up, creating a nostalgic atmosphere. Kappo Ajimi opened in 2000 along Nakagawa River in the center of Nakasu.
Owner Goji Kawarabata trained at such restaurants as Gion, Kyoto's Japanese cuisine restaurant Sakamoto, and honed his skills in Japanese cuisine (kappo) restaurants in Kyoto and Ginza. "I want to cherish the atmosphere created when the chef, guests, tasty food, and delicious sake come together on the stage that we call a counter", says Kawarabata.
The restaurant name "Ajimi" comes from the desire to join with the guests and create a sixth taste, humanity, along with the five existing tastes - sour, bitter, sweet, spicy, and salty. Sit down expectantly, and delicious, seasonal ingredients will be delivered to you at the perfect timing. While the owner is particular about the ingredients coming from Kyushu - the vegetables are from Itoshima and Hakata - some foodstuff that he judges as good are delivered from anywhere in the country, Hokkaido to Okinawa. There is always a stock of 10 different types of Japanese sake, all chosen and stocked by Kawarabata himself.
Inside the restaurant is 10 counter seats and 4 private rooms which seat 2 to 8 guests. For private parties, the walls can be moved to create enough space for up to 32 people, including the counter seats, making it ideal for family anniversaries, memorials, business entertainment, etc. Veteran chef Kawarabata's dishes and warm hospitality will provide for a special time during a busy day.
