Kiyama has earned a Michelin star within a year of opening. Experience kaiseki cuisine which has redefined the basics of water and dashi stock.

Quietly located on the first floor of an apartment building, a 5-minute walk from Subway Marutamachi Station and close to the Kyoto Imperial Palace, is kaiseki cuisine restaurant Kiyama.

Kiyama has drawn attention to itself after earning one star from the Michelin Guide soon after opening in April 2017. Owner Yoshiro Kiyama is a skilled chef who trained at Wakuden for 16 years from age 19, of which 10 years were spent as head chef. When opening the restaurant, Kiyama heard that there is a waterway with delicious water running through near the restaurant. He then drilled a well for use at the restaurant and so began his use of delicious spring water. Something else that Kiyama is particular about is the basic of Japanese cuisine: dashi stock. As guests enjoy watching the chef shave dried bonito, he uses a fragrant and clear dashi for the soups. Each dried bonito block is tasted, selected by the level of saltiness and acidity, and 3 types of bonito blocks are blended to balance the taste. Courses are on the menu for both lunch and dinner, starting with sayu (water boiled until white), then dish after dish which incorporates seasonal ingredients and the ultimate stock. Guests can look forward to dishes with an interesting twist which change with every visit, like the uni (sea urchin) and egg bowl. Light tea is then served to finish. All the dishes are matched with and served on various wares, from Japanese and Chinese antiques to those by current artists. Chef Kiyama loves alcohol, and keeps a collection of 20 to 30 types of Japanese sake and 80 bottles of wine in the wine cellar at all times.

The interior of the restaurant is based on wood, creating a clean and cozy atmosphere. With 9 counter seats, two private rooms which can accommodate 4 to 7 guests and 4 to 6 guests, Kiyama is ideal for dates, business entertainment, dinner parties with friends, and other various settings.
