In the Residences building of Roppongi Hills is the teahouse "Saryo Miyasaka". The head of the teahouse, Shotaro Igarashi, exerts his skills to let guests casually enjoy a taste of Miyasaka.
Hailing from Fukushima Prefecture, Igarashi trained at famous Japanese restaurants in Kyoto before returning to his home area. While working as the fifth generation head of his family's Japanese restaurant, he met Nobuhisa Miyasaka, with whom he shared a training period, and joined Miyasaka as a right-hand man for the launch of "Oryori Miyasaka". In 2017, Igarashi was selected as head chef for the opening of "Saryo Miyasaka".
"Saryo Miyasaka" limits its course items to offer reasonable prices. Its best-known dish, as at the main Miyasaka, is the earthen pot rice. "Saryo Miyasaka" polishes select rice on its own and cooks it infamous regional waters. It brings forth the worldview of the main restaurant, even offering Niebana dishes. Its own originals include a final offering of daifuku sweets filled with strawberries, muscats, or other seasonal fruits. Appropriately for a teahouse, it also offers a diverse selection of teas appraised by qualification-holder Igarashi and his staff, including organic teas, Zencha green tea, Hojicha roasted tea, domestically produced oolong tea, and matcha tea. Sake is available in 30 to 40 differing types. Only 6 types are on the menu, so ask about your preferred type. The wine list is focused on natural wine low in impurities.
From Igarashi's belief that broth is the flower of Japanese cooking, sea bream Chazuke (tea on rice) was added to the lunch menu. The golden broth is poured over sesame-garnished sea bream slices atop freshly-cooked rice. Garnished with Chirimen-jako dried fish fry with Chinese pepper, crumbled nori, and pickles, and served with after-meal sweets and matcha tea, the dish is popular with families living in the Residences building, tourists, and guests from overseas. The simple and comfortable interior of "Saryo Miyasaka" has a counter with 8 seats, tables, and 2 four-seat private rooms. It is an urban oasis where guests can casually enjoy a Japanese space and tastes, on business or for personal dining.
