Enjoy high-quality champagne with beautiful and finely prepared French cuisine
Philippe Mille, who won the Meilleur Ouvrier de France (M.O.F.), France’s highest professional distinction, at the young age of 38, is the head chef of the Michelin 2-star “Chateau Les Crayères”, and now he has opened his first restaurant in Roppongi Midtown in Japan. The restaurant in Japan is supervised by Hiramatsu – which runs restaurants and hotels throughout Japan. The chef is Mr. Hirokazu Fujita, who learned his skill at restaurants under Hiramatsu.
The concept of "Roppongi Terrace by Philippe Mille" is to be "a graceful and elegant champagne salon." Champagne is primarily gathered from the Champagne region, where Mr. Mille is based, but also has over 100 different types of sparkling wine – ranging from major and famous Maisons to small-scale craft houses. The menu offers dishes which bring out the best and true value of champagne - from a Degustation de Champagne course which is designed dish by dish to marry perfectly with champagne, to a monthly "By The Glass" menu, which provides 5 to 6 different types of champagne by the glass each month.
The foundation of Philippe Mille's cuisine is a thorough dedication to selecting the best ingredients, to bring out the absolute best in flavor from each seasonal ingredient. His belief is that "ingredients are a local region's treasures," and he holds Japanese ingredients in the highest regard. For example, he uses ingredients such as carrots from Takashima, Shiga Prefecture, shiitake mushrooms from Atsugi, and Omi Wagyu beef. He has created a menu that emphasizes Japanese ingredients, featuring dishes which display a deep understanding for Japanese chefs, ingredients, and the tastes of the Japanese people. And of course, each dish has been crafted to precisely and superbly pair with champagne.
"Roppongi Terrace by Philippe Mille" is designed to be "an urban oasis," with light streaming in from the immense windows to create a bright and cheerful atmosphere, featuring 80 seats, and 4 private dining rooms. Mr. Mille is particularly fond of the outdoor garden terrace where diners can view the Midtown gardens, and enjoy the many expressive transitions of the seasons and time periods - such as the cherry blossoms in spring, the fresh greenery of summer, and illumination displays at night. Diners can surely discover the diverse pleasures of champagne and cuisine, here in this elegant environment, under the secure services of Hiramatsu management.

In our continued efforts in improving our customer experience, we have decided to reconstruct our terrace seating area; while we will continue to operate as usual during construction, we hope all guests understand prior to reserving that from January 7th to mid February of 2019, our terrace seating will be unavailable, and that the view of the terrace from our main dining hall will also be curtained.
