“Sushi Himeshara”, a two star sushi restaurant, moved from Susukino in Hokkaido to the Maruyama Park area in December 2017. The owner, Akira Tanaka, was highly praised for his skill as a sushi chef during his training in Japanese cuisine and sushi. He went independent in 2003 after gaining experience in many different sushi restaurants. With its well-earned two star rating, Sushi Himeshara has a reputation as one of the finest sushi restaurants in Hokkaido, drawing many guests, both Japanese and international, to the restaurant.
The kanji for "sushi" combines the characters of "fish" and "delicious." Based on that same idea, "Sushi Himeshara" uses the written characters of "fish", "rice", and "delicious", to conceptualize its own sushi. The idea is that fish combined with rice is what makes sushi taste delicious. "Sushi is prepared inside the mouth," Tanaka said. Sushi is the synergy created by its elements of vinegared rice and seafood mixing together in the mouth, while experiencing the aroma coming out through the nose. Two types of red vinegar are used for vinegared rice at Sushi Himeshara. The course menu consists of sushi, assorted appetizers, and then a final round of sushi at the end, attracting guests with its unique style.
Tanaka-san is a veteran chef and when asked about how he developed his course menu concept, he explains that it was born from his idea of sushi throughout the season. At the beginning of the season, when sake is not ready yet, he wants the taste of the sushi to be clear. Then when the sake is ready in the middle of the season, it can be enjoyed with snacks that he carefully selects to pair with the sake. Finally at the end, he wants his guests to feel moved by the sushi again. One of our specialties, "Topped with all shrimp" is a beautiful and luxurious dish with vinegared rice, using Botan shrimp, shrimp miso and shrimp eggs layered in a mille-feuille style. The freshly prepared sushi is handed over the counter for guests to enjoy its rich flavor and they will savor every single bite of this truly superb sushi, without leaving so much as a crumb on their plates.
Tanaka-san deliberately designed his restaurant to be a simple space so that guests can enjoy the experience of watching the sushi being prepared impeccably in front of them and savoring its delicious taste without distractions. The interior of the restaurant is simple with a basic black base and without any hints of excess or unnecessary flashiness in the design. The counter is made of Japanese cypress and the specially made ice room, which only two woodworkers in Japan have the skill to make, provides a strong presence in the space, contributing to an extraordinary atmosphere.
