"Ginza Toriya Premium Honten" is located a 2-minute walk from Ginza Station on the 5th floor of a building along Sotobori-dori Road. This is a restaurant where you can enjoy a marriage of wine and yakitori made using Hinai jidori chicken from Akita in a subdued interior.
Hinai jidori chicken is delivered directly from Akita and is carefully skewered, once stick at a time, each day. The skilled chef sprinkles Sicilian rock salt and grills the yakitori to be crisp and juicy over thin, cylindrical pieces of top quality Kishu Binchotan charcoal. A particularly popular dish is the yakitori standard: chicken thighs. Toriya Premium also offers yakitori made from unusual parts of the bird, although stocks are limited. Many loved dishes apart from yakitori are the deserts and seasonal vegetables, which change each month. Toriya Premium is particular about the safety of its ingredients and uses pesticide-free vegetables grown using organic fertilizers ordered from contracted farmers. Wine to go with the food feature a lineup of close to 300 types, with a focus on vintages from Burgundy, Bordeaux, France, and the south of France.
The subdued, dark brown interior of "Toriya Premium" has 2 L-shaped counters that seat 10, a semi-private room that seats 6–8 and tables seating for 4. The counter, with its moody atmosphere created by indirect lighting, and the luxurious tables covered in tablecloths are used to suit the occasion, be it dinner with a date or a celebration for a friend or family member; be it business entertainment, or a dinner party.
