Tagetsu is a kaiseki-style Japanese cuisine restaurant located near Aoyama Street in Omotesando.
After working at prestigious Japanese restaurants Kaiseki Ryu-un-an, Genyadana Hamadaya, and Kappo Kisaku, Chef Hideo Mochizuki opened Tagetsu in 2013.
Tagetsu is famous for their careful and thoughtful preparation of dishes. The soup stock is made from steeping kombu seaweed and dried bonito shaved in-house, and cooking it to a clear soup with a rich aroma. In winter, tilefish from Wakasa, Shogoin daikon from Kyoto, and yuba dumplings are combined with the stock to make a soup that showcases the seasonal flavors.
Tagetsu also stocks limited-edition Japanese sake varieties from the best breweries in Kanagawa. One of them is "Ryu," which is available in only a handful of restaurants in the country. With the solid "umami" flavor of rice, this sake goes outstandingly well with Japanese cuisine.
