Located in Shinjuku 3-Chome, "Chiso Fufu" is the place where you can forget about the hustle and bustle outside of the restaurant and enjoy the Japanese cuisine. Chef Katsumi Hattori is an experienced chef who worked at Hotel Apex Toya (now The Windsor Hotel Toya Resort and Spa), Hotel New Otani and Japanese Cuisine Kamogawa for 25 years. According to the chef, people in the old days used to say “embrace the season with your heart", and he tries to cook while keeping that in his mind. This idea is where the name of the restaurant came from, "the wind that brings different seasons" and "enjoys the seasonal food". The menu is changed every two weeks according to the Solar terms that are a more detailed transition of the season.
The course begins with "Ichiban-dashi (first brewing of soup stock)" that is seasoned with sake and salt. The ingredients for the main course is purchased every day from Tsukiji fish market. Serving the seasonal vegetables, the best taste of the season is presented. "Chiso Fufu" serves unique Japanese cuisine that does not follow the traditional format in Japanese cuisine, for example, it does not serve the essence of Japanese cuisine, "the bowl". The restaurant has about 15 different kinds of sake, 5 different kinds of champagne and 8 different kinds of white wine to match with the seasonal Japanese cuisine. Furthermore, there is not only counter-seat but also private room and box sofa seat where customers can use for a casual gathering.
