ÉdiTioN Koji Shimomura is a world gourmet guide awarded French cuisine restaurant located on the ground floor of a skyscraper directly connected to Roppongi-itchome station.
Chef Shimomura, who trained at a three-starred restaurant in France, currently organizes several international cooking events. While using traditional French cooking techniques, he creates elegant dishes whose tastes do not depend on the excessive fat and sugar contained in butter and cream. His specialty dish is seaweed-flavored cold oysters lightly cooked with seawater, served with citrus and seawater gelee.
From the tables and chairs to the cutlery, everything inside the restaurant was picked out by the chef himself. The interior shows his strong determination in creating the atmosphere that best matches the sophisticated French cuisine he prepares.
