Having gained experience at world-class Michelin three-starred restaurants such as "Michel Bras" in France and "The Fat Duck" in England, Chef Namae brings his originality and creativity to his contemporary French restaurant L'Effervescence.
The courses for your meal will be selected by the chef. Contrary to the innovative appearance of his dishes, the fresh aroma of herbs and the flavor of fresh ingredients erupt spectacularly in your mouth. By cooking seasonal ingredients for long periods of time at a low temperature, he brings out their natural flavors. At this restaurant you will encounter foie gras prepared through a special process, pie pastries stuffed with finest ingredients and made to look like apple pies, and other dishes each endowed with the passion and energy of its creator. Enjoy some wine with the cuisine as you sit amidst the relaxed atmosphere for an experience that will exceed your expectations.

I was born Japanese, and I aim to draw out and enhance the harmonious flavors of this land that I love and other places around the world. My goal is to create a complete dining experience bound by a unity of plates, tables, customers, and myself.
Our restaurant is a true "retreat within the city." During your 3–4 hour sojourn here, escape from the hustle and bustle of the city and forget reality for just a while.
With love for the abundant nature of the forest and sea along with deep gratitude for the toil in the fields and pastures and appreciation for the unseen yeast and microbes, our hearts and bodies will be filled with "effervescence."
